Beet Arugula Salad

I dislike salads in general, so when I tell you the beet arugula salad is yummy you should believe me! My friend has also told me that she doesn’t like beets, but likes my beet salad, so make sure you get pickled beets and not canned beets for the tart flavour that sets this recipe apart. I thought that pickled beets must be low in glycemic index, but they are actually medium, so pairing with arugula and cheese is key to bring down the overall glycemic index of this recipe.

Beet Arugula Salad

Ingredients

  • 1/2 c pickled beets [medium]
  • 0.5 package arugula [low]
  • 55 g goat cheese [low]
  • 1/2 tbsp extra virgin olive oil [low]
  • 1/2 tbsp pickled beet juice [medium]

Steps

  1. If the pickled beets are not pre-cut in bite-size pieces, cut them first. Put pickled beets [medium] and arugula [low] in a bowl.

  2. Using a fork to scrape, crumble goat cheese [low] (2oz) over the salad.

  3. Add extra virgin olive oil [low] and pickled beet juice [medium] to the salad.

  4. Mix all ingredients together.
