Tomato Egg Drop Soup

Tomato egg drop soup is a traditional Chinese soup that works as a delicious low glycemic index appetizer or side. Traditionally this soup has a thickener such as cornstarch, but these thickeners have high glycemic index. You can add chicken or vegetable broth/bouillion to make it more flavourful, but I usually skip it as it can be tricky to find one without any added sugar or additives. I find that the combination of white pepper and sesame oil gives the soup enough flavour.
Tomato Egg Drop Soup
Ingredients
- 1 L water [low]
- 1 medium tomato [low]
- 1 egg [low]
- 1/4 tsp salt [low]
- 1/8 tsp white pepper [low]
- sesame oil [low]
Cookware
- medium pot
Steps

In a medium pot, start boiling water [low].

Chop tomato [low] into small cubes (about 1-2 cm), and add to the water.

Whisk egg [low] in a small bowl.

Once water is boiling, turn off the heat and slowly pour the whisked egg mixture in a circular motion around the pot, distributing it evenly across the surface.

Add salt [low], white pepper [low] and sesame oil [low] to taste.
